I am getting the same error. Ubuntu 20.04.1. Installed wine and lutris fresh from their own repositories.

Got on the discord and there is a fix. User flgx posted their dxvk_versions.json file link
Copying the file to $HOME/.local/share/lutris/runtime/dxvk fixed it.
