…You mean which Wine version would be used when installing a Windows game? My guess would be, the default one (configured in the Wine runner options).
If you want to know which Wine versions are available (aside from the system-wide install), just open version manager of Wine runner; you can select a new one for download right from there.
Scripts that don’t specify the wine version will use the latest version installed by lutris, if don’t have any, then will download the latest version on lutris server (wine-lutris-[version]).

~/.local/share/lutris/runners/wine/
